Thịt cá ngọt, thấm gia vị, thơm mùi lá chuối nướng được dùng kèm với khế, bún và chấm với mắm nêm cay nồng. Món ăn này thích hợp bữa ăn gia đình, cuối tuần hay những bữa tiệc nhỏ.
Cá nục làm sạch, dùng dao khứa 2-3 đường lên thân cá. Pha hỗn hợp ướp cá: 1 muỗng canh hành tím băm, 1/2 muỗng cà phê muối, 1/2 muỗng cà phê hạt nêm, 1/2 muỗng cà phê tiêu, 1 muỗng canh dầu mè, 2 muỗng canh dầu ăn, 1 muỗng cà phê bột nghệ, khuấy đều. Quết đều hỗn hợp lên cá, để khoảng 3-4 giờ.
Thơm gọt vỏ, bỏ mắt, cắt miếng vừa. Cho thơm vào máy xay, xay nhuyễn. Tỏi băm, ớt giã nhuyễn.
Khế cắt thành thanh. Chuối tước sơ vỏ, cắt miếng, ngâm trong nước có pha 1/2 muỗng cà phê muối, rửa sạch. Rau răm rửa sạch.
Pha mắm nêm: Cho thơm đã xay, tỏi, ớt, hành lá cắt nhỏ, 3 muỗng canh mắm nêm, 1 muỗng canh đường trắng, chanh vắt lấy nước vào chén, khuấy đều.
Nếu dùng bún khô, bạn ngâm bún vào thau nước lạnh khoảng 15 phút. Sau đó, đun nồi nước sôi, cho bún vào luộc 5-8 phút. Tắt bếp, đậy kín nắp nồi vì bún sẽ tiếp tục chín, đợi nguội đổ bún ra thau nước lạnh. Xả nước cho bún không bị dính chùm. Nếu dùng bún tươi, bạn dùng tay sạch rũ cho sợi bún tơi ra.
Lá chuối rửa sạch. Cho cá đã ướp gia vị lên, cuộn lại. Đặt cá lên bếp than nướng đến khi lá chuối bên ngoài chín thơm. Nếu dùng cá lớn trước khi nướng, bạn hấp sơ cá khoảng 3-5 phút để cá không bị cháy bên ngoài mà thịt bên trong không chín. Nếu không có than, bạn có thể nướng ở lò, nhiệt độ 180 độ C từ 40-45 phút.
Cho cá ra đĩa. Ăn kèm khế, chuối xanh, rau răm, đậu phộng rang, bún và chấm cùng mắm nêm đã pha ngon tuyệt.
